go is well installed within my Fedora 41 VM

but brew fails to build this package as it cannot find go

brew install --source go should get you going. go is one of a handful of critical formulae for which folks have contributed changes that enable it to be built on Linux ARM platforms, but official bottle (pre-compiled package) support is still not announced.

The parameter --source go don't exist. I suppose that you are referring to this one

  -s, --build-from-source          Compile formula from source even if a
                                   bottle is provided. Dependencies will still
                                   be installed from bottles if they are
                                   available.

If this is the case, then the command that you suggest to execute is brew install -s go !

New question: Why do we have to build go even if it is already installed within the VM ?

I installed homebrew using this install.sh script without problems -> https://github.com/ZhongRuoyu/homebrew-aarch64-linux/tree/main

That script would also fail if the head that's first in your PATH doesn't behave like the coreutils one.

Back to the main topic: any formula declaring a dependency on go requires the go formula, not an externally-installed go binary that might not even be related to the Go programming language. Homebrew itself carefully sandboxes the build to use the go binary supplied by the go formula, so even if the go found first in your PATH is this script:

$ cat `which go`
#!/usr/bin/env bash
echo "GOTCHA!"

your Go-dependent formula will still build correctly.

That's not the official way to install Homebrew. https://docs.brew.sh/Installation is. It even has this warning:
